High-Protein Nectarine Cream Chia Pudding

Makes 2 breakfasts

Ingredients

  • 1 400ml tin of coconut cream
  • 1 tablespoon nut butter (we love almond)
  • 4 tablespoons Peri Protein POWder - Vanilla
  • 1 nectarine
  • 1/2 cup chia seeds
To serve: chopped fresh fruit and nuts


Method

  1. Pop coconut cream, nut butter,  Peri Protein POWder - Vanilla and nectarine in a blender.
  2. Blend until smooth and creamy.
  3. Pour into a bowl and add the chia seeds. Stir until combined.
  4. Pour cream mixture into a container, seal and pop into the fridge overnight or for a couple of hours.
  5. When the chia seeds are lovely and swollen and soft, you're ready to go!  Top your Nectarine Cream Chia Pudding with chopped fresh fruit and nuts and enjoy!
